aromas and flavors of the grapes.
Vinfication:
The first selection of the grapes is made directly in the
vineyard; follows another strict selection just before the destemming
process; after a delicate pressing, the must is poured for two thirds in
small stainless steel vats at controlled temperature, and the last third is
left 2/4 Months fermenting in French barriques. Then it follows the blend
of the two parts, so that a perfect balance between fruit flavor, acidity and
aromatic complexity is reached.
Bottling is in April/May.
