Rodos Valdarno di Sopra DOC Cabernet Sauvignon biologico

100% Cabernet Sauvignon refined in French barrels

Silty loam soil without skeleton, mainly exposed north/south, on the hills of Valdarno di Sopra at an average height of 295 m above sea level.

Low spurred cordon training system with 5000 vines per hectare.

Cabernet Sauvignon clones 337-338-341 R140 rootstock. Forty hectoliters are produced per hectare.

The harvest is manual, generally carried out from the first ten days of October.

During the harvest the grapes are carefully selected. After destemming, red vinification is carried out with fermentation in steel at a controlled temperature. Fermentations last from twenty-four to thirty days depending on the quality of the grapes in relation to the vintage. After racking, a period of one year follows, in which two thirds of the wine is aged in new French oak barrels, selected for cabernet sauvignon, and the remaining third in steel barrels. A cut is then created between the two parts and the mass is transferred to third and fourth year ‘barriques’. Finally, after careful selection, the final blend is generated and bottled. Bottle aging lasts at least three months. The wine is generally ready three years after the harvest.

Rodos is certainly an interesting expression of Tuscan Cabernet Sauvignon which stands out for its fruit content in both its aroma and flavour. It was created to be paired with delicious game dishes, such as hare and fallow deer in ‘sweet and strong’ and goes well with the famous aged pecorino known as L’Abbucciato Aretino PGI. The first vintage was produced in 2000 and immediately had a great response. Rodos is a wine of great maturation and longevity, with an intense ruby ​​red color with violet reflections that persist for many years; with aromas of red fruit, blueberry and blackberry, with frank and broad tertiary notes among which clove and vanilla stand out. In the mouth it is fresh and savory with a flavor of blueberry, pepper, coriander and notes of aromatic and vegetal herbs. It is a tannic and persistent wine, with great body, harmonious and fine.
